CHEDDAR
Matured 200ft underground in the Wookey Hole Caves in the Somerset Mendip Hills, where the constant temperature & humidity of the caves provide ideal conditions for storing & maturing cheddar. The porous nature of the cheese allows it to absorb the earthy, nutty surrounds.
It is firm and cream-coloured with a complex aroma that is sweet, creamy, farmy and earthy. The flavours are big, robust and well rounded with competing notes such as sweet and salty.
